If you're looking for a new go-to slow-cooker recipe, here's a must-try! This is one of those "dump and go" recipes where you simply throw everything in a slow-cooker and let it cook all day. I do mine in the Dutch oven but you can make this in a Crockpot! I give instructions for both. Don't forget all your favorite toppings for this one: cheese, avocado, cilantro, lime, onion, tortilla strips!

Slow-Cooker White Bean Chicken Chili

Ingredients

  • 2 pounds chicken breast

  • ½ white onion, chopped

  • 3 garlic cloves, minced

  • 4 cups chicken broth

  • 1 lime, juiced

  • 1 16oz bottle salsa verde (I like H-E-B Mi Tienda brand or Herdez)

  • 1 15oz can white beans (northern, cannellini)

  • 1 4oz can diced green chiles

  • 2 teaspoons cumin

  • 1 teaspoon salt

  • Toppings of choice: cheese, avocado, cilantro, chopped onion, tortilla strips, lime

Directions

  1. Add all the ingredients to your Crockpot or Dutch oven.

  2. Cook on low for 4-6+ hours, high for 3-5 hours or in the Dutch oven at 275 for 4+ hours.

  3. Using two forks, either shred the chicken breasts on a cutting board and return to pot, or shred them directly in the pot. Give everything a stir to combine the soup.

  4. Serve hot with your toppings of choice!
