This recipe will be a go-to for you during the school year, football season, holiday hosting and everything in between! It couldn’t be easier or more flavorful and you can do so many things with the BBQ chicken including: sandwiches, sliders, tacos, pizza, flatbreads and salads, just to name a few!
You can do this in a Crockpot or Dutch oven!
Ingredients
-
2+ pounds chicken breast
-
1 bottle of BBQ sauce (my favorite is Head Country Original Bar-B-Que Sauce)
- 1/2 yellow onion, finely chopped
- 3 garlic cloves, minced
-
2 tablespoons fresh parsley, chopped
-
1 tablespoon olive oil
- Salt & pepper
-
1 tablespoon apple cider vinegar
-
1 tablespoon pickled jalapeño juice (optional/if handy)
Directions
- Place chicken in a crockpot or dutch oven, salt and pepper the chicken then drizzle olive oil over chicken.
Pour in your bottle of BBQ sauce and add all remaining ingredients.
Cook in the crockpot on high for 4-6 hours, low for 6-8 hours or in a Dutch oven in your oven at 275 for 4 hours.
Once done cooking, transfer chicken breasts to a cutting board and shred using a fork and a knife, then return to the pot and stir chicken in the sauce so it’s completely mixed.
Serve shredded chicken however you’d like, if you don’t eat it all first!
