One-Pot Shrimp and Tomato Orzo

This delicious one-pot meal comes together in 30-minutes, uses simple ingredients and is incredibly flavorful! It's a great way to mix up your shrimp recipes. My husband couldn't get enough of this dish! You can absolutely use either fresh or frozen shrimp here, just try to find jumbo!
Ingredients

1 pound jumbo shrimp, peeled and deveined

2 garlic cloves, minced

¼ cup olive oil

1 lemon, juiced

½ teaspoon red pepper flakes

2 Tablespoons olive oil

1-2 cups whole cherry tomatoes
-
1 teaspoon salt
-
2 garlic cloves, minced

½ shallot, chopped
-
1 cup orzo
-
1 28oz can crushed tomatoes
-
1 cup chicken broth or water
-
¼ cup dry white wine (I use Pinot Grigio)

1 teaspoon sugar

1 Tablespoon fresh parsley, chopped, plus more for serving

Fresh crumbled feta for serving
Shrimp Marinade
Orzo Dish
Directions
In a small bowl, add the shrimp followed by all the marinade ingredients: minced garlic, olive oil, lemon, red pepper flakes, salt and pepper. Let the shrimp soak in marinade in the refrigerator while you continue to prep the dish.
In a Dutch oven or a deep skillet or pot, heat the 2 Tablespoons of olive oil over medium heat. Once the oil is hot, add your cherry tomatoes and sprinkle with salt. You’re going to “blister” the tomatoes by letting them cook in the hot oil for 3-4 minutes without stirring until they’ve softened.
Once your tomatoes are blistered, add the minced garlic and stir so the garlic doesn’t burn.
Pour in the orzo and stir it to “toast” with the hot tomatoes and garlic. Then add the can of crushed tomatoes, your broth or water, wine and sugar.
Bring everything to a boil then reduce to a simmer and cover your pot, letting the orzo cook to “al dente” or slightly underdone. This takes about 10 minutes.
After 10 minutes, remove your lid and stir the orzo. Add the shrimp with all juices and marinade to the orzo, along with 1 Tablespoon of chopped fresh parsley. Cover your pot again and let the shrimp cook for 6-7 minutes.
Serve the dish hot in bowls and top with additional parsley and crumbled feta!
