I took my recipe for Jalapeño Cheddar Salmon Burgers from A Month of Dinner, Vol. 2 and used beef instead of salmon—they're delish! Grill or stovetop for these burgers, you choose. They pair well with Mexican Rice from A Month of Dinner, Vol. 2.
This makes 4 smaller patties, please adjust recipe and ingredients to increase your portions.

1+ pounds ground beef

2/3 cup Panko

1 cup sharp cheddar cheese, shredded or cubed

¼ yellow or white onion, finely chopped

1 jalapeño, chopped

1 green onion, sliced

1 teaspoon chili powder

1 teaspoon cumin

½ teaspoon paprika

½ teaspoon garlic powder

1 cup plain Greek Yogurt

1 lime, juiced

Spiced Yogurt Sauce
Directions
Choose whether you’re cooking burgers stove-top in a skillet or grilling them (my preferred method)! If grilling, fire it up!
In a large bowl, combine hamburger ingredients: ground beef, panko, cheese, onion, jalapeño, green onion, chili powder, cumin, paprika, garlic powder and salt. I use my hands for this. Form mixture into patties.
Cook the patties either on the stove or on the grill until cooked to your liking!
While burgers are cooking, add all sauce ingredients to a food processor and blend to create your sauce! Add more spices if desired.
Serve burgers on buns or over greens with spiced yogurt sauce and any burger favorites, such as avocado.
Recipe Note
This recipe can be made dairy-free by omitting the cheddar cheese and using a dairy-free yogurt for the sauce. To make it gluten-free, use a gluten-free Panko.
