This Hot Corn Dip is definitely a guilty-pleasure and not quite as "light" as most of my recipes, but man oh man is it good! This is the perfect game day snack to serve a crowd! Have plenty of chips or crackers because it will go fast.
Ingredients

1 block cream cheese, softened

½ cup sour cream

2 tablespoons Cholula or hot sauce of choice

2 cups shredded Mexican-blend cheese

1 lime, juiced

1 teaspoon cumin

2 teaspoons chili powder
-
1 teaspoon salt

2 cans whole kernel corn, drained

1 15oz can of Rotel

3 green onions, chopped
Directions
Preheat your oven to 350 and grease a 9x13 baking dish.
In a large bowl with a hand mixer or in a stand mixer, mix together the cream cheese, sour cream, Cholula, shredded cheese, lime juice, cumin, chili powder and salt. Beat until well-combined.
To the same bowl, add the 2 cans of corn, can of Rotel and sliced green onions and use a spatula or spoon to stir to combine.
Transfer corn dip mixture to prepared baking dish and bake in the oven for about 30 minutes util hot and bubbly. Serve with your favorite tortilla chips or crackers!
