One of my favorite ways to cook salmon is to cook it in a foil packet in the oven! It's full proof, so simple and the easiest clean-up. You get delicious, tender salmon every time! These bowls taste like a tropical getaway: coconut, ginger, mango, cucumber... delish!
Please note, this recipe has been made to serve 2 adults! Our toddlers aren't the biggest salmon fans yet, a work in progress, right!?
Ingredients
Coconut Ginger Rice

½ cup jasmine rice

½ cup coconut milk
-
¼ cup water
-
2 teaspoons fresh ginger, minced

1 teaspoon butter or olive oil
Honey Soy Salmon
-
½ pound salmon filet
-
3 Tablespoons soy sauce
-
2 Tablespoons honey
-
1 Tablespoon sesame oil
-
½ teaspoon Sambal Oelek Chili Paste (or alternative such as Sriracha)

1 lime, juiced
-
1 garlic clove, minced

Fresh mango, sliced

Fresh avocado, sliced
Directions
First things first, preheat your oven to 375!
Start by getting your rice cooking! Follow the directions on your jasmine rice bag, but use the coconut milk and water instead of all water. Be sure to rinse your rice before cooking (a pain, but worth the time to get fluffy rice). Add the butter or oil as well as the minced ginger to the rice and cook as directed.
Once you have the rice going, start on the salmon. Line a baking sheet with foil then add a second layer of foil, this one will be used to wrap the salmon. I like to have the pan lined with the first one in case any sauce leaks out. Place your salmon filet on the foil.
Make your sauce adding the following ingredients to a bowl: soy sauce, honey, sesame oil, Sambal, lime juice and minced garlic. Whisk them together.
Take the foil sheet that the salmon is sitting on and pull up the foil around the salmon. You’re going to pour the sauce on the fish so you don’t want the sauce to leak out!
Pour the sauce on the salmon and then wrap the foil tight together to seal the fish in with the sauce. It doesn’t have to be pretty or perfect! Again, the bottom sheet of foil is just to catch any leaks or spills and make clean-up a breeze.
Cook salmon in the oven wrapped in the foil for 15 minutes!
Remove salmon from the oven. Assemble your bowls by adding cooked rice, salmon, mango, avocado, cucumber salad and any other toppings you’d like!
