I'm not sure what else to call this salmon but it has beautiful fresh herbs, a punch of tangy citrus and is so light and refreshing! This salmon tastes especially delicious during the spring and summer months! I like to serve this over Coconut Lime Rice from A Month of Dinner, Vol. 1. This recipe is perfect if you have a spring herb garden on-hand!
Ingredients

1 pound salmon filet (check for bones!)

1 lime, zest and juice

1 orange, zest and juice

1 shallot, thinly sliced

2 tablespoon olive oil, divided

Fresh mint, chopped

Fresh basil, chopped

Fresh cilantro, chopped

Salt and pepper

1 teaspoon sugar
-
½ teaspoon paprika

1 teaspoon rice vinegar
Directions
Preheat your oven to 275. At this temperature, it will take the salmon about 30 minutes to cook. You can cook at a higher temperature if you need it to cook faster.
Zest your orange and lime then cut both in half. In a bowl, add half of the orange zest and half of the lime zest along with the juice from one half of the orange and one half of the lime. You’ll save the other halves of zest/juice for the “dressing.” Add 1 tablespoon of olive oil to the bowl with the juice and zest.
Place your salmon in a baking dish, sprinkle with salt and pepper then pour the juice, zest and olive oil mixture over the salmon. Set the bowl aside.
Top the salmon with sliced shallot then bake the salmon for 30 minutes at 275.
While the salmon is baking, in the same bowl you used for the juice, zest, oil mixture, add the remaining zest, citrus juice, salt, pepper, sugar, paprika, rice vinegar, 1 tablespoon of olive oil and chopped fresh herbs. Whisk together.
When the salmon is done cooking, remove from oven and pour the citrus “dressing” over the salmon. Serve salmon over greens, rice, pasta, whatever you’d like!
