This easy grilled chicken recipe is so simple but very flavorful! I paired it with some zesty, lemony orzo and my Greek Yogurt Dill Sauce in A Month of Dinner, Vol. 2—YUM! A very light, clean, filling dinner that I could make on repeat (especially during summer months). Here are the recipes for both the grilled chicken and lemony orzo. Please note, the chicken does need time to marinade!
Ingredients
- 1.5+ pound chicken breast tenders
- 1/4 cup olive oil

1 tablespoon honey
- 1/2 lemon, juiced

1 tablespoon fresh parsley, chopped
- 3 cloves garlic, minced

2 teaspoon paprika

1 teaspoon balsamic vinegar
- Salt & Pepper
- 1 cup orzo

2 teaspoon butter
- 4 cups chicken broth
- 1/2 cup white wine
- 1/2 lemon, zest and juice
- Fresh parsley
- Salt and pepper
- Goat or Feta cheese crumbles (optional)

Directions
Grilled Chicken
- In a bowl, whisk together olive oil, honey, lemon, parsley, garlic, paprika, balsamic and salt and pepper.
Add chicken to a Ziploc bag then pour in marinade. Seal bag and give it a good shake to mix everything! Let chicken marinade all day, overnight but at least for 2-3 hours.
When you’re ready, grill the chicken! I don’t know specific temperatures, I just wing it, but the chicken breast tenders don’t take long! Just a few minutes on each side.
Serve with Lemony Orzo, on any salad or as an entree with any dish. This grilled chicken is super yummy! This recipe is gluten and dairy free.
Lemon Orzo
Heat a saucepan over medium heat. Add butter and orzo and toast orzo slightly in the butter.
Add your broth and wine and bring to a boil then simmer until liquid begins to absorb and orzo is cooked, about 10-15 minutes. The liquid won’t completely absorb (unlike risotto). Your orzo package will provide cook time too!
Strain liquid from orzo and return to pot then add lemon zest, lemon juice, parsley, salt, pepper and cheese of choice (optional)!
