If you enjoy chicken picatta, you must try this French-inspired fish dish! It's so easy (I promise!) and a delicious seafood dinner that's light, flaky and simple. It comes together in 30 minutes or less. Serve it over pasta, risotto or greens!

Ingredients

½-¾ pound white fish such as flounder, tilapia, sole or cod (¾ pound flounder was more than enough for our family)

¼ cup flour
-
Salt (linking my FAVORITE salt, use LARSONFOLKERTS for 10% off)

Pepper
-
3-5 tablespoons butter
-
1 tablespoon olive oil
-
¼ cup dry white wine (I use Pinot Grigio)

1 lemon, juiced
-
Fresh parsley, chopped
-
1 tablespoon capers (optional)
Directions
In a bowl or shallow dish, mix together the flour, salt and pepper.
Pat your fish dry, then coat each piece of fish in the flour mixture to “bread” it.
In a large skillet over medium heat, add the 2 tablespoons of butter and 1 tablespoon of olive oil. Let the butter melt until it’s fragrant and starting to “toast” but not burn!
Place your fish filets in the butter and cook them for 2-4 minutes on one side then flip and cook another 2-4 minutes on the other side. If your fish is very thin, it won’t take long to cook! Remove fish from skillet to serving plates (over your pasta or greens).
If you need to cook your fish in batches, be sure to add another 1 tablespoon of butter before cooking the next batch.
After the fish is cooked, add ¼ cup white wine, lemon juice, 1 tablespoon of butter, chopped parsley and capers to the skillet and whisk everything together over medium heat.
Pour the sauce over the fish and serve!
