I like to call these "Celebration Sandwiches" because they're perfect for celebrations such as baby or bridal showers, birthday parties, graduations, family reunions, holiday gatherings such as Easter, baptisms and every celebration in between!

These "Celebration Sandwiches" are perfect for any celebration: a baby or bridal shower, Easter, a graduation party, family reunion, baptism reception, an office party, holiday gatherings, tea parties, you name it!
I've included 3 different sandwiches: Jalapeño Chicken Salad, Caprese Sandwich and Fancy Ham Sandwich.
To me, little sandwiches like these all taste fabulous on mini croissants! You just can't go wrong with a flaky, buttery croissant! But you're welcome to choose any bread you'd like.
Ingredients

2-3 cups shredded rotisserie chicken (I actually use a package of chicken breast tenders and bake in the oven, tossed with olive oil, salt and any spices, at 375 for 17-20 minutes and then shred that meat. A little fresher than rotisserie chicken from the store).

1-1.5 cups mayonnaise of choice

1-2 teaspoons apple cider vinegar

2 teaspoons garlic powder

2 teaspoons onion powder

½ cup candied jalapeños, chopped (Texas Pepper Works Candy Krisp Jalapeños are my favorite!)

4 teaspoons candied jalapeño juice from jar

Salt and pepper to taste

Bread of choice, such as mini croissant

Fresh pesto, store-bought or my homemade recipe from A Month of Dinner, Vol. 1

Greens of choice, I like to use arugula, an arugula-butter lettuce mix or a spring mix

8oz fresh mozzarella ball, thinly sliced

1-2 roma tomatoes, thinly sliced

Balsamic glaze

Bread of choice, such as mini croissant

½ pound thinly sliced deli ham such as black forest or honey ham

Greens of choice, I like arugula but you could do a spring mix or spinach

1 red apple of choice, thinly sliced

Boursin cheese, I like either the garlic and herb or shallot and chive

Honey mustard

Bread of choice, such as mini croissant
Jalapeño Chicken Salad Sandwich (makes 8-10 sandwiches)
Caprese Sandwich (makes 8 sandwiches)
Fancy Ham Sandwiches (makes 8-10 sandwiches)
Directions
Jalapeño Chicken Salad Sandwich
In a large bowl, mix together all chicken salad ingredients. Measurements are a bit approximate so you can adjust to taste as needed!
Slice croissants in half, if using, and spread chicken salad on one half, then top with the other half to create your sandwich! I like mine nice and full!
Caprese Sandwich
Slice your croissant in half, if using, and spread a layer of pesto on the bottom half.
Next, layer greens then sliced mozzarella followed by sliced tomato.
Drizzle the top of the tomato with balsamic glaze then add top half of bread to finish off your sandwich!
Repeat, layering in order: pesto, greens, mozzarella, tomato, balsamic glaze.
Fancy Ham Sandwiches
Slice your croissant in half, if using, and spread a layer of honey mustard on the bottom half.
Next, layer greens then sliced ham, followed by sliced apple.
On the top half of your croissant or sandwich bread, spread a layer of Boursin. Complete your sandwich!
Repeat the process, layering in order: honey mustard, greens, ham, apple, Boursin.
