Ingredients

3 tablespoons butter

½ yellow or sweet onion, chopped

1 celery stalk, chopped

1 large carrot, chopped or julienned

2 cloves garlic, minced

¼ cup flour
-
2 tablespoons dry white wine

2 cups chicken broth

2 cups heavy cream
-
2 cups broccoli florets (frozen or fresh)

Salt and pepper to taste

2 teaspoons paprika
-
2-3 cups shredded sharp cheddar cheese
Directions
In a large pot or Dutch oven, melt the butter over medium heat then add the onion, celery, carrot and garlic, cooking until softened and fragrant.
Add the flour and stir to coat vegetables. Follow with the 2 tablespoons of dry white wine and stir, letting the wine absorb.
Follow with the broth, stirring, and then heavy cream.
Once cream is mixed in, add the broccoli, salt, pepper and paprika and stir to combine. Add grated cheddar cheese, stirring, and let soup sit over medium heat to thicken.
Serve soup hot!
Recipe Note
You can freeze this soup after making it! I store mine in freezer Ziploc bags, labeling the bags and laying them flat in the freezer.
