Step outside your flavor "comfort zone" and give this 30-minute meal a try! You can choose any protein you'd like such as shredded rotisserie chicken or shrimp.
Ingredients

1 tablespoon olive oil
- 1/2 yellow onion, thinly sliced
- 1 red bell pepper, thinly sliced
- 2 garlic cloves, minced

3 tablespoons red curry paste

2 tablespoons fresh ginger, grated or minced

1 teaspoon ground turmeric
- Salt and peper
- 3 cups chicken broth
- 1 can full fat, unsweetened coconut milk

1 tablespoon fish sauce
- 1 lime, juiced
- Rice noodles (cooked), shredded chicken or shrimp, cilantro, peanuts for add-ins
Directions
In a dutch oven, add the olive oil over medium heat then add sliced onion and bell peppers, sautéing until soft and tender. Add the minced garlic and stir, letting garlic get fragrant.
Stir in the red curry paste, ginger, turmeric and a little salt and pepper.
Pour in chicken broth, coconut milk and fish sauce and stir to combine. Let everything simmer so the flavors meld together. Squeeze in fresh lime juice!
Add in any rice noodles (cook these separate then add to pot, if using) and protein such as shredded chicken or shrimp.
Serve curry hot in bowls and top with garnishes such as chopped cilantro, chopped peanuts and extra lime juice!
